"Chef", a French word that means "Cook", the person who is performing the cooking process of the food materials. For some reason some people take this word "Chef" so serious which make it so hard to understand and it is even worse if these people have no idea about cooking or the restaurant business at all, and they think they have a right to teach you what "Chef" means, regardless of the lack of confidence they have. They think, when you say the word in French, it becomes a "label". (Nothing against the beautiful French culture and language though).

Because of the reasons related to this issue, I am proud to call myself "a simple cook", after I have seen such people call themselves "chef" without any experience and knowledge, more of these, without creativity "the most important". Only some people I know really deserve "the label meaning" of the word "Chef" and they are such humble and kind people that they mostly refuse this labeling and prefer to call themselves "A Cook".

I decided to become a cook after I got into wine culture and since then always have wanted to be a cook working on recipes to design specific flavors to match with specific wines, so as being a simple cook specializing to highlight the wine culture, I started my own private company and since then I do catering of wine events, beer events and other beverage events as well and cooked many dinners for private diners too.

What does Cogito mean? 

We are living in an era which very big crowds of people had forgotten to think about what they drink and eat. Spending less time in the kitchen with the rush of the daily-urban life and slowly getting used to lose the sense of taste by consuming the industrial chemical vegetables, fruits and other products made us not to sense, therefore not to think about what we drink and eat. But once the wiseman said "COGITO, ergo sum. / I THINK, therefore I am. ". According to him, the existence came up with conscience. A quick analyze of this one of the most famous phrases of the philosophy history with today's nutrition-wise vision just brings up the idea of losing conscience hence existence. When we don't think about what we drink and eat, lack of thinking brings the question of nonexistence, that easily connects to the idea of "you are what you eat" too, an interesting and clear connection to what the wiseman said about existence. So dreaming about setting dinners and tastings where people have fun while thinking and discussing about the food, wine and other matching beverages made me start my company and think everyday about flavors and pairings. So much things to try, experience and learn. An expertise of wine&food is just simply impossible for a human life. So I read, learn and think. As much as I do, I realize how less I know. As I realize that, my hunger for knowledge grows bigger and I read, learn, and THINK more. Therefore COGITO!

Developing an interest in culinary arts and the passion of wine made me come up with an idea of setting up different wine events which for instance we taste red wine with fish and white wine with beef, compare wine to beer for cheese pairing and setting up many other events with the "out of the box" ideas while thinking and discussing with guests in a cozy, spontaneous and cheerful atmosphere. My type of wine tasting is a family dinner concept, funny, cheerful, friendly, rather than a silent, serious tasting like a business meeting. As Larry Stone said, wine is a comfort food, so put more wine on the table. Think winewise!

Beginning to write / Kirjoittamisen aloittaminen



On this page, you will be reading wines rated by me with their tasting notes written amateurish and with my personal view. As wine tasting is a very subjective thing following a knowledge (searching, reading, drinking/palate experience, travelling) you can find some comments discordant to yours, that is perfectly normal as everyone has their different tastes. But that should of course not mean legitimizing the tawdriness. Subjectivity should follow the knowledge as said in the beginning, as it should be in all issues in the world. So here my issues are wine… and Finland. Simple. As much as I read and learn about wine, I just realize how less I know about it. It is a huge fantasy, a great school never meant to graduate, a universe. If I say that I know about wine as much as the world, I just keep in my mind that wine is the universe.
So, here I will write about the wines available in Finland or sometimes not available, also I will rate them on a 100 points scale and sometimes talk about the price-quality ratio for an average customer. 

The scale is between 50-100. 

50-70: From undrinkable to tolerated for once.
71-80: Drinkable but very ordinary, nothing special.
81-85: A bit over the average, over the ordinary that has little surprises, like acidity, an unexpected body, extroverted nose, etc.
86-90: Good wines which deserve to be drunk again.
91-95: Very satisfying, well made, serious wines. Reflection of the production care.
96-100: Poetry.

Tällä sivulla, te voitte lukea minun amatööri-viiniarvostelujani ja maistelu muistiinpanojani omasta  näkökulmastani. Koska viininmaistelu on hyvin subjektiivinen asia vaatijen tietämystä (etsiminen, lukeminen, juominen/makuaisti, matkailu) voit löytää joitakin kommentteja jotka ovat ristiriidassa omien mielipiteidesi kanssa. Se on hyvin normaalia, sillä kaikillahan on oma makunsa. Mutta tämä ei tietenkään tarkoita mauttomuuden hyväksymistä. Subjektiivisuutta  pitäisi seurata tietämys kuten alusse sanoin. Kuten sen pitäisi seurata kaikessa maailman asiossa. Täällä minun asiani koskevat viiniä… ja Suomea. Yksinkertaista. Mitä enemmän luen ja opin viineistä, ymmärrän kuinka vähän tiedän. Viini on valtava fantasia, koulu josta ei koskaan valmistu, universumi. Jos sanon että tiedän viineistä yhtä paljon kuin maailmasta, pidän mielessä että viini on universumi.

Eli Täällä kirjoitan Suomessa saatavista viineistä tai joskus ei saatavista. Myös arvostelen ne 100 pisteen asteikolla ja joskus kirjoitan hinta-laatu –suhteesta tavalliselle kuluttajalle.

Salud / Kippis


As everybody tells the story why to start their blogs, mine is as simple as the the name of the blog, I like wine, I take it serious, it is not only a part of fun for me but poetry, literature, philosophy, soul, romanticism, politics, business, friendship, hostility, love, hate, peace, war, history, sun, climate, sea, earth… Shortly it is exactly what anything could be about life. I also like to observe people and life in Finland, never as a “badaud” but a “flaneur”. Here you will be reading mostly about wine tastings out of professional concerns and about Finland. I prefer to write in English and I will try to write the same articles also in Finnish language aiming to improve my Finnish skills including Finnish wine vocabulary. I am not Finnish, so, sometimes you will be also reading what an immigrant would face here in this country, how nice the life here or how challenging.

In these pages, No advertisement comment will be tolerated. The wine tasting notes or any other article here is not written to damage any business, person, establishment, political/philosophical/social view or group. They are just personal views of an amateur wine enthusiast.

Kuin ihmiset kertovat miksi he aloittavat blogin, minun syyni on melkein yhtä yksinkertainen kuin blogin nimikin. Pidän viinistä, otan sen vakavasti, se ei ole vain jotain kivaa ja hauskaa minulle, vaan runoutta, kirjallisuutta, filosofiaa, sielua, romantiikkaa, politiikkaa, liiketoimintaa, ystävyyttä, vihollisuutta, rakkautta, vihaa, rauhaa, sotaa, historiaa, ilmastoa, aurinkoa, merta, multaa… Lyhyesti, se on mitä vaan, mikä liittyy elämään. Minä myös tarkkailen mielelläni ihmisiä ja elämää Suomessa, mutta en koskaan niin kuin “badaud”, vaan niin kuin “flaneur”. Täällä te tulette lukemaan useimmiten viinin maistelusta ilman ammatillisia näkökulmia, sekä Suomesta. Kirjoitan mieluiten englanniksi, mutta yritän kirjoittaa samat artikkelit suomeksi. Tarkoituksenani on kohentaa suomen kielen taitoani, ja oppia etenkin suomalaista viinisanastoa. En ole suomalainen, joten joskus te saatte lukea, mitä maahanmuuttaja kokee tässä maassa, kuinka mukavaa elämä täällä on tai kuinka haastavaa.
